The color is pea green before ripening purple and pink at maturity. Oil yield: 16% -18%. The quality of oil and its yield is very good, excellent shelf life, it also has good resistance to major diseases and cold.

Cerasuola cultivar is a vigorous variety with a fruit of medium size, deep green color that turns black when ripe. Its oil is more than 18% (from 18% to 21%).
